Ingredients:
1 each red, yellow, orange, green and purple sweet peppers
1 Organic Cucumber with skin left on (washed)
1 dozen baby carrots chopped or 3 large organic carrots washed and chopped
6 celery stalks (halved and chopped)
1/2 C. purple onion (optional)
1 Honey Crisp or Pink Lady apple (chopped)
6 large Basil Leaves (chopped)
1 pint Roma or Cherry Tomatoes (halved)
1/4-1/2 cup Sprouted Pumpkin Seeds*
1/2 Cup Dried Unsweetened Cranberries*

Dressing:
2 Meyers Lemons juiced
1/2 Cup of Olive oil
Salt and Pepper to taste
Directions:
Combine all ingredients in a large glass mixing bowl.
Drizzle with dressing or toss.
Makes an EXCELLENT base for a grilled chicken or grilled salmon on top (for my non-Veggiesaurus friends)! 🙂
