Did you know today is National “Blondie” Day? Sorry, Debbie Harry, I wasn’t referring to you! 😉 For a chocolate lover like yours truly, I don’t ever need a designated day to enjoy chocolate…but who am I to argue with a Nationally recognized day to honor my favorite guilty-pleasure?! Chocolate you say??? Yeah, I’m all for it!
The best part of this recipe is that it can be made with or without flour, so if someone you love is “GF” (gluten-free) you can still enjoy this treat together!
Flourless Peanut Butter Chocolate Chip Blondies
Serves 8-16 *unless you’re like me. Then it’s like “2”!

Ingredients
2 C. Laura Scudders All-natural smooth peanut butter (or equivalent)*
2/3 C. Light brown sugar (packed)
2 eggs
1 Tsp. Baking soda
1 Bar Green & Blacks semi-sweet or dark chocolate, grated
*Make sure peanut butter and oil are well mixed
**If making traditional blondies (with flour) do the following:
- Decrease peanut butter by 1/2 C. 1/2 C. softened butter
Then add:
- 1/2 C. Softened butter
- 1 Cup of Unbleached all-purpose flour
- 1/4 Tsp. Salt
- 1/2 Tsp. Vanilla extract
Directions
Preheat oven to 350F.
Grease the bottom of an 8×8 glass baking dish
In a large bowl, combine peanut butter, eggs, and brown sugar
Next, add in baking soda and mix well
**If making traditional blondies, add butter and vanilla extract to the peanut butter, eggs, and brown sugar before mixing all the dry ingredients in a separate bowl and folding it in
Spread batter evenly over glass dish
Place in oven on center rack for 30 minutes
Once done, allow to cool slightly before cutting
Serve and Enjoy!
