This easy one-dish meal is a favorite in the Fitness MOMents® household and is something that the whole family can enjoy! Don’t worry if you don’t like Seafood, you can easily substitute this recipe with grilled chicken instead! ~Trish
Serves: (4-6)
Ingredients:
1 1/2 lbs. of wild-caught Salmon
1 lb. (or 4 C.) baby Spinach
1 16 oz. box whole grain Pasta (any shape)
1 12 oz. jar of Christopher Ranch Pesto *click here for the homemade recipe
1/4 C. Fresh Grated Parmesan Cheese
1-2 Cloves fresh Garlic or Christopher Ranch minced Garlic in oil
1-2 Tbsp. Olive Oil (optional)
Directions:
Bring 2 1/2 C. of water to a rolling boil. Add pasta and cook for 11-12 min. or until tender.
Preheat grill to high heat (about 450). Place salmon fillets on aluminum foil and spread with garlic. Salt and pepper filets then cover with foil and place on grill.
After pasta is fully cooked, add to bowl filled with spinach leaves. Heat from pasta will wilt the
spinach. Drizzle olive oil over spinach and pasta mixture.
Salmon is done when it is a solid color (opaque) and is flaky when cut with a fork
Remove Salmon from the skin and add to the pasta and spinach mixture. Mix thoroughly.
Add Grated Parmesan Cheese and salt and pepper to taste.
