Garlic Lemon Roasted Brussel Sprouts
Serves 4
1 lb Brussels sprouts (washed, ends removed, halved)
2-3 cloves of garlic (minced)
2 tablespoons extra virgin olive oil
2 teaspoons fresh squeezed Meyer lemon juice*
*Lemon juice is optional. If lemon isn’t your thing, you can prepare these with a balsamic glaze instead. I love Fig Balsamic!
Sea Salt
Ground pepper
Pecorino Roman *optional
Instructions:
Preheat oven to 400F.
Wash and prepare Brussels sprouts per above
In a bowl toss sprouts with garlic, oil, and lemon juice. Spread on a baking tray and season with salt and pepper
Bake for about 15 minutes.
Use spatula to flip over once to ensure even roasting
Bake for another 10 minutes.
