With the long days of summer behind us and the kids making plans for back-to-school shopping before the first day of classes in two weeks, my thoughts are cooler days, beautiful fall sweaters and of course, baking! While Pumpkin Spice everything is on the top of everyone’s list, my Homemade Apple Cinnamon Muffin recipe is on mine.
Naturally low in sugar and made with real, fresh apples, this is one treat you can feel good about serving to your family. Loaded with whole grain oats and quinoa, this recipe is as delicious as it is NuTRISHous!

Homemade Apple Cinnamon Muffins

Ingredients
(1) C. Rolled Oats, uncooked
(1) C. Quinoa (Cooked)
(1) C. Honey Crisp Apples; peeled
(2) Eggs; lightly beatean
(3) Tbsp. Real Maple Syrup
(1) Tsp. Ground Cinnamon
Almond Slivers; optional
Directions
Preheat oven to 350F.
Prepare Quinoa according to instructions. Measure cooked Quinoa for recipe.
In a large bowl, mix the Oats and Cinnamon.
Add Quinoa and mix again.
In a separate bowl combine maple syrup, whisked eggs, chopped apples. Mix until just combined. Set aside.
Place 12 muffin liners into a muffin pan.
Using a large spoon, fill each muffin cup about ⅔ of the way.
Top with Almond Slivers *optional.
Place in oven and bake for about 25-30 minutes.
