INGREDIENTS:
2 cups whole wheat flour
1 ½ teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon table salt
2 eggs, beaten
½ cup Truvia for baking
1/2 cup low-fat plain yogurt
1/4 cup canola oil
1 cup mashed overripe bananas (about 2-3)
2 teaspoons pure vanilla
2 teaspoons ground cinnamon *optional
1/2 cup chopped toasted walnuts, pecans, or chocolate chips *optional
DIRECTIONS
Preheat oven to 350 degrees. Spray bottom of 9x3x5-inch loaf pan with cooking spray and lightly dust with flour.
In small bowl, mix flour, baking powder, baking soda, salt and cinnamon. Set aside.
In large bowl mix eggs, Truvia, yogurt, oil, bananas and vanilla until well blended. Slowly add dry ingredients, mixing well. Stir in nuts or chocolate chips. Pour batter into pan.
Cover with a tent of aluminum foil and bake for 30 minutes. Uncover and bake an additional 30 minutes, or until wooden toothpick comes out of the center clean.
